Dried garlic

Garlic flakes

Technical specifications :
Garlic flakes are obtained from varieties of garlic (allium sativum) that have been specially selected and grown with a view to being dried. Prime grade garlic bulbs are sorted, separated into individual cloves, washed, finely sliced and then dried by means of hot air. 6 kilos of fresh garlic are needed to make 1 kilo of dried garlic.

Use :
In all dishes where a garlic flavour is required (cold meats, tinned foods, ready-cooked dishes, dishes prepared à la provençale, meat dishes, garlic mayonnaise, snail butter, spice mixtures and seasonings…

Garlic granules

Technical specifications :
Dried garlic flakes are crushed and then sieved in order to obtain garlic granules of a predetermined size.

Use :
In all dishes where a garlic flavour is required and the addition of very small pieces of garlic is called for: cold meats, tinned foods, ready-cooked dishes, dishes prepared à la provençale, roasts such as leg of lamb, garlic mayonnaise, snail butter, spice mixtures and seasonings, snacks and garlic sticks.

Garlic powder

Technical specifications :
Dried garlic flakes are ground and sieved. We also produce enhanced garlic powder. In this case extracts and flavouring are added to make a powder with a stronger flavour.

Use :
In all dishes where flakes or granules are unsuitable and a finer, smoother texture or stronger flavour is required: cold meats, tinned foods, ready-cooked dishes, dishes prepared à la provençale, roasts such as leg of lamb, garlic mayonnaise, snail butter, spice mixtures and seasonings, snacks and garlic croutons…

Garlic pulp

Technical specifications :
This product is obtained from specially selected varieties of garlic. The cloves are peeled and finely ground, after which salt is added (approximately 8% volume). The pulp may also be enhanced with garlic flavouring.

Use :
In all dishes where a garlic flavour is required (tinned foods, cold meats, snail butter, sauces, etc.). It is used in the same way as fresh garlic and in the same quantities. 1 kilo of flavoured garlic pulp is equivalent to 2 kilos of fresh garlic.
