Onion
flakes
Technical
specifications :
Onion flakes are obtained from varieties of onion (allium cepa) that have
been specially selected and grown with a view to being dried. Prime grade
fresh onions are sorted, washed, finely sliced and dried by means of hot
air. 12 kilos of fresh onions are needed to make 1 kilo of dried onions.
The dried onion flakes can then be grilled, i.e. roasted. Onion flakes
that have undergone this process have the flavour of cooked onions, with
enhanced aromatic qualities. Onion flakes can alternatively be fried in
vegetable oil in order to obtain the flavour of onions that have been
browned.
Use :
In soups, vegetable dishes and all preparations where the addition of
pieces of onion is called for, e.g. ready-cooked dishes, stews, braised
meats, fish dishes, stocks, marinades, onion tarts, etc.. In cooked meats,
especially blood puddings and pâtés.
Onion
granules
Technical
specifications :
Dried onion flakes are crushed and then sieved in order to obtain onion
granules of a predetermined size. When the flakes have been grilled beforehand,
grilled granules are obtained. When the flakes are fried beforehand in
vegetable oil, fried granules are obtained.
Use :
In soups, vegetable dishes and all dishes that call for the addition of
small pieces of onion.
Onion
powder
Technical
specifications :
Dried onion flakes are ground and sieved. When the flakes have been grilled
beforehand, grilled onion powder is obtained.
Use :
In all dishes where flakes or granules are unsuitable and a finer, smoother
texture is required: sauces, soups, crisps, ravioli, etc..
Onion
pulp
Technical
specifications :
This product is obtained from specially selected onions which are peeled
and finely ground, after which salt is added.
Use :
In all dishes where an onion flavour is required (tinned foods, cold meats,
sauces). It is used in the same way as fresh onions and in the same quantities.
Fresh
peeled onion
Technical
specifications :
For this product, fresh onions are used (with a low water content). The
onions are washed, trimmed, then graded (only large onions are used) and
peeled. They are then packaged as they are.
Use :
They are particularly suitable for cured meats for freshness of the product.
This product should be used within 7 days of being opened.
